Ingredients:

  • 4 Wagyu Osso Bucco cuts, about 2 inches thick
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 4 garlic cloves, minced
  • 1 cup dry white wine
  • 2 cups beef or vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Zest of 1 lemon
  • Gremolata (optional):
    • 2 tablespoons fresh parsley, finely chopped
    • Zest of 1 lemon
    • 1 garlic clove, minced

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. Season the Wagyu Osso Bucco cuts generously with salt and pepper. Dredge each piece in flour, shaking off any excess.
  3. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown the Osso Bucco cuts on all sides until nicely seared. Remove them from the pot and set aside.
  4. In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened and lightly browned.
  5. Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for a few minutes to reduce slightly.
  6. Return the seared Osso Bucco cuts to the pot. Add the beef or vegetable broth, diced tomatoes (with their juices), fresh rosemary, fresh thyme, and lemon zest. The liquid should cover the meat but not submerge it entirely.
  7. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
  8. Allow the Wagyu Osso Bucco to braise in the oven for about 2 to 2 1/2 hours, or until the meat is tender and easily pulls away from the bone.
  9. While the Osso Bucco is cooking, prepare the gremolata by combining the chopped parsley, lemon zest, and minced garlic in a small bowl. Set it aside.
  10. Once the meat is tender, remove the pot from the oven. Serve the Wagyu Osso Bucco with the cooking liquid, spooning it over the meat. Garnish with the gremolata, if desired.
  11. Accompany the Osso Bucco with your choice of side dishes, such as creamy polenta, mashed potatoes, or risotto.
